Chocolate Toffee Popcorn Treats

Makes 24

  • 8 cups of Better Made Butter Popcorn
  • 8 ounces of chocolate toffee bits
  • 1 cup of peanuts, chopped
  • 2/3 cup of light corn syrup
  • 2/3 cup of sweetened condensed milk
  • 1/2 cup of light brown sugar
  • 5 tablespoons of butter
  • 3 tablespoons of granulated sugar
  • 1 teaspoon of vanilla extract
  • 11 ounce bag of milk chocolate morsels

Line a 13x9 baking sheet with a large sheet of sturdy aluminum foil. Form handles out 2 opposite sides – so you can get the bars out of the pan later.

Place the popcorn, toffee bits and peanuts in a large mixing bowl. Toss to combine.

Place the corn syrup, condensed milk, brown sugar, butter and sugar in a heavy saucepan set over a medium high heat. Stirring constantly, heat to a gentle boil, reducing the heat as required. Cook until the mixture turns to a lightly golden brown caramel sauce. Remove from the heat and stir in the vanilla. Pour over the kettle corn mixture and toss with spoon until everything is coated. Pour into the prepared pan and press into an even layer.

Place the chocolate morsels in a microwave safe bowl. Microwave on high and then stir until melted. If needed, place in the microwave in 15 minute increments, stirring well until the chocolate is melted. Pour over the kettle corn mixture and spread into an even layer.

Chill for 1 hour. Use the foil handles to remove the block from the pan. Peel the foil away. Use a serrated knife to cut into bars.
